
Very easy!!!
Seriously!
I had the meat from one lobster, cooked and diced.
Then one bar of swiss cheese, (12 oz shredded)
1 oz of shreded sharp cheddar
One premade pie crust.
2 eggs beaten
1 cup light cream.
2 cooked stips of bacon cut in pieces.
1/4 cup chopped onion, sauteed in the bacon grease.
Make the bacon and then sautee the onion in the bacon grease.
Put the bacon and onion in the bottom of the pie crust.
Put some of the shredded swiss cheese on top of the bacon and onion.
Then put the lobster meat in.
Then add the swiss and top with the cheddar.
In a bowl or big measuring cup beat the two eggs with the cream.
Pour over the cheese mixture and then press down on the cheese to make sure all is covered with the cream.
Sprinkle with pepper.
Bake at 350 until golden brown, about 20 minutes.
Voila!!!
Lobster quiche!
You can also do it with shrimp.

is that what we had on christmas eve?? its SOO GOOD...I love SWISS CHEESE...and thanks to you and Kira for taking care of kitty kitty while we went to see mom and sisters...sleeping with mom on christmas...best present Steve will ever give me..they just love him!
oh yah-- when we got in...we were starving..and the chocolate delight you snuck in the fridge...was heaven sent!
Now onto New Years!! were going to have so much fun!!!
Glad the Isles beat the rangers..and sorry about last night- but the record speaks for itself!
