Winter Classic Lobster Calzone


Well, since I'm not really rooting for either team, but happy as a clam to be watching it, the highlight of my night was dinner. I decided in honor of the first NHL game this year on NBC, I had to make something special: I came up with Lobster Calzone. Now, while a lot of people said cheese and lobster don't go.... It's CHEESE and LOBSTER, no really what the hell could be bad.

It wasn't. Totally FABU. Far more fabu than the ice the Pens and Caps had to skate on with the rain coming down.


Ingredients:

1 Pizza dough, at room temperature and risen
1/2 cup cooked lobster, diced
1 cup whole milk Ricotta
3/4 cup shredded 4/cheese mix
1 slice proscuttio ham shredded
1 egg beaten
1/8 teaspoon Italian Seasoning.
sprinkle garlic powder.

Mix lobster meat with Ricotta cheese & shredded 4 cheese mix. Add shredded proscuitto and almost all of the beaten egg. Reserve about a teaspoon for an egg wash. add seasoning and mix well.


Stretch pizza dough on pizza stone or round pizza pan evenly. Place cheese mixture on half of the dough and then fold over to seal in a half moon shape. Pinch edges and crimp with fork. Add tablespoon of water to remaining beaten egg and brush over calzone. Sprinkle with garlic powder and bake at 400 for 20 minutes or until golden brown. Serve with heated tomato saude.
